Echt italienische Pizza - real italian pizza

Dies ist ein Post aus der Serie "Backen mit Hefe".

Es gibt viele unterschiedliche Arten, Pizza zu genießen. Ich persönlich ziehe die ganz dünne traditionelle italienische Pizza vor.

There are many different ways to enjoy pizza. Personally, I prefer the very thin traditional italian kind.

Dieses Rezept reicht für 4 kleine Pizzen oder 2 Bleche. Da der Teig aber sehr dünn ist, sollte man noch einen Salat oder ähnliches dazu planen, damit alle satt werden.

This recipe is enough for 4 little pizzas or 2 backing trays. Since the dough is very thin you might want to make a salad or a side dish to ensure that everyone eats his fill.

Zutaten/ ingredients:

Für den Teig/ For the dough:
  • 20g Hefe / 20g fresh yeast
  • etwas lauwarmes Wasser / some lukewarm water
  • 500g Weizenmehl / 500g wheat flour
  • 1/2 TL Salz / 1/2 teaspoon salt
Für den Belag/ For the topping:
  • 1 kleine Dose geschälte Tomaten / 1 small tin canned peeled tomatoes
  • eine handvoll Cherrytomaten / a handful of cherry tomatoes
  • 1 Büffelmozarella / buffalo mozarella
  • etwas frisch geriebener Parmesan oder Pecorino / some freshly grated Parmesan or Pecorino
  • Salz und Pfeffer / Salt and Pepper
  • Knoblauch / garlic
  • einige Blätter Basilikum / some basil leaves
  • Dazu: etwas (nur sehr wenig) Belag nach Wahl wie Paprika, Zwiebeln, Pilze oder Salami. Wichtig: Die Pizza darf nur ganz dünn belegt werden, sonst wird sie matschig.
  • Additionally: some (scant) topping of choice like bell peppers, onions, mushrooms or salami. Important: put topping on the pizza only lightly to avoid mushy dough.


Zubereitung / Preparation:

  • Die Hefe in ca. einem halben Becher lauwarmen Wasser auflösen. Kurz stehen lassen.
    • Dissolve the yeast in about half a mug of lukewarm water. Let it rest shortly.
  • Das Mehl auf die Arbeitsplatte geben und eine Mulde formen.
    • Put the flour on your countertop and create a well.
  • Die Flüssigkeit in die Mulde füllen und untermischen. Etwas salzen und gut kneten. Dabei nach und nach Wasser hinzugeben, bis sich ein weicher, geschmeidiger Teig gebildet hat (wie ein Babypopo). Er sollte weder reißen noch kleben.
    • Fill the liquid into the well and mix. Add salt and knead well. In doing so add water until you have a soft and elastic dough (like a baby butt). It should neither tear nor stick.
  • Nun den Teig erstmal gut zugedeckt gehen lassen, bis er doppelt so groß geworden ist.
    • Let the covered dough rise until it has doubled its size.
  • Den Backofen sehr heiß vorheizen und aus den Dosentomaten mit Salz, Pfeffer und Knoblauch eine kleine Soße kochen. Den Belag vorbereiten.
    • Pre-heat the oven and prepare a simple tomato-sauce from the tinned tomatos, salt, pepper and garlic.
  • Den Teig nochmal kurz durchkneten und für 4 einzelne Pizzen oder 2 Bleche aufteilen.
    • Knead the dough once again for a short time and divide it into portions for 4 single pizzas or 2 baking trays.
  • Ganz dünn ausrollen, auf das Blech packen und dünn mit Soße, Belag, Büffelmozarella und Parmesan belegen.
    • Roll out very thin, put on the backing tray and cover lightly with sauce, topping, mozarella and parmesan.
  • ca. 20min bei ca. 230°C backen. Vorher schon nachgucken!
    • Bake at around 230°C for about 20min. Check it before!

Backen mit Hefe - Baking with yeast





Aus diesem Post soll mal eine Serie zum Backen mit Hefe werden. Gebäck aus Hefeteig - egal ob süß oder salzig - schmeckt lecker, macht satt und ist günstig. Unter dem tag "yeast" werdet ihr mit der Zeit immer mehr Rezepte mit Hefeteig finden.

This post is supposed to be a start into a series about backing with yeast. Yeast pastry - either sweet or savoury - is delicious, filling and cheap. In future you will find new recipes tagged "yeast". 



Zunächst einige Grundlagen zu Hefeteig:
A few basics on working with yeast first:
  • Ich arbeite immer mit frischer Hefe. Diese muss möglichst frisch sein und darf nur mit sauberen Händen bearbeitet werden. 
    • I prefer to work with fresh yeast. This has to be as fresh as possible and you have to clean your hands thoroughly before handling the dough.
  • In Deutschland gibt es viele Marken frischer Hefe zu kaufen. Probiert mehrere Marken, bis ihr die gefunden habt, die für euch am besten funktioniert. Aus irgendwelchen Gründen wird bei mir der Teig mit Dr. Oetker nie so schön obwohl ich sonst von deren Produkten überzeugt bin. 
    • In Germany you can buy several  brands of fresh yeast. Try several of them until you find the one that works best for you. For some reasons, "Dr. Oetker" doesn't seem to work for me although I'm convinced by their other baking products.
  • Hefeteil liebt es warm und gemütlich. Die Schüssel mit dem Teig kann man z.B. zum Gehen lassen gut an eine Stelle stellen, auf die die Sonne scheint.
    • Yeast dough loves it to be warm and cozy. Place your dough into a sunny spot for rising.
  • Hefeteig wird bei sehr hohen Temperaturen gebacken. Um Energie zu sparen kann man sich überlegen, ob man gleich die doppelte Portion backt oder noch etwas anderes mit in den Ofen schieben kann.
    • Yeast pastry needs very high temperatures to bake. Make two loads at once or place something else into the oven to save energy.
  • Gebäck aus Hefeteig schmeckt eigentlich nur frisch gebacken. Reste lassen sich aber sehr gut einfrieren. Das mache ich sogar, wenn ich die Reste direkt am nächsten Tag essen möchte.
    • Yeast pastry tastes best when it's very fresh. Leftovers can be frozen easily. I even freeze the leftovers if I plan to eat them the next day. 
  • Hefeteig braucht Zeit. Meine Mutter sagt immer, dass der Teig am besten wird, wenn man ihn "vergisst". Also lieber länger als kürzer gehen lassen! 
    • Yeast pastry needs time. My mother always says that the dough is best if you "forget" it in between. Hence let the dough rise rather longer than shorter!

Hefeschnecken (yeast pastry)

This week it was typical capricious weather for April although it is already May. I decided to create some cozyness and bake yeast pastry. These are great because they're so easy to make, cost next to nothing and you can freeze the leftovers for the next coffee visit.



Here is how it goes:

ingredients for the dough (room temperature):
1kg flour (type 405)
40g fresh yeast (in Germany that is one cube)
150g butter
7 tablespoons sugar
~ 200ml milk (proper - no low fat)
"Zimtzucker": take an empty jar and fill it with sugar, add cinnamon (start with a teaspoon), close the lid and shake the jar. The result should be a medium light brown shade. If not add a small amount of cinnamon until the result is satisfying.

ingredients for the frosting:
150g powdered sugar
juice of half a lemon
100g butter

Note: Yeast works best if you heat up your kitchen to be really cozy (>24°C).

Choose the largest bowl you own, place the flour in it and create a fist-sized hole in the middle. Heat one coffee mug of milk (~200ml) until it is lukewarm. It must not be too warm, otherwise the yeast will die. Crumble the yeast into the milk and add a spoonfull of sugar. Mix it gently and pour it into the hole you created in the flour. Now gently dust the liquid with flour from the rim.
Wait at least for 20min. There have to be cracks in the flour.
Add the butter and the leftover sugar. Knead the dough with your hands (remove rings). At first it will all be squishy and dry parts but with time, muscles and the heat of your hand you will soon have a smooth dough as soft as a baby's bottom. Make a ball out of it, place it in the bowl, cover it with a clean kitchen cloth and let it rest for at least 30min. The volume should be triple the original size.
Start to heat up your oven to ~170°C. Divide your dough up into two equal parts and roll the first part out into rectangle shape about the size of your baking tray. Sprinkle the dough with "Zimtzucker" (and raisins if you like) and roll it up tight along the longer side. Slice the roll into 1-1.5cm thick slices and place them with spacing on your baking tray (on baking paper). Do the same with the second part of dough.

Place your baking trays in the oven for about 13min. Start checking on them after 10min. The pastries should be golden with only a slight hint of brown. Get them out early before they start to get dry.

Meanwhile prepare the frosting: Put all the ingredients into a pot and slowly heat them up. Stir well.

Place your furnace grate over your sink and place the still hot pastry on it. Apply the frosting. (Be careful when kids are around, hot sugar involved).

Hefeschnecken taste best when still warm (not hot!). Be careful if you are not used to yeast pastry not to overeat for the dough will still grow a bit when eaten.
Freeze the leftovers immediately. Yeast pastry dries out fast but tastes very well defrosted and heaten up.
